Stuffed chicken thighs

Try this feta and olive stuffed chicken recipe. Great on their own or served with Zucchini Noodles, these chicken thighs are bursting with Greek flavor. Top with extra feta for a cheesier bite.


1 cup crumbled feta cheese

¼ cup shredded Swiss cheese

1 teaspoon minced garlic

1 tablespoon olive oil

¼ cup olive, chopped

1 pound boneless chicken thighs

¼ teaspoon salt

¼ teaspoon freshly ground black pepper

Preheat the oven to 425°F.

In a large bowl, mix together the feta cheese, Swiss cheese, garlic, olive oil, and olives.

On a flat surface, lay out the chicken thighs. Spread the meat open so the thighs lay flat. Place an equal portion of the feta mixture on each piece of chicken. Close the thighs. Secure with toothpicks. Season with the salt

and peper.

Place the chicken in a baking dish. Put the dish into the preheated oven and bake for about 18 minutes. With a meat thermometer, check the internal temperature. It should reach 165°F before serving.
